Key Differences Between the Jøni Traditional Kettle Models
Getting the most from your kettle investment means clarifying your short- and long-term operational needs before selecting a model. Jøni offers a broad range, but not all features are available (or upgradable) on every unit. Careful upfront planning ensures your kettle serves you today and into the future.
Key considerations include:
- Mixing Capability: Only some models offer integrated programmable stirring—essential for products like sauces or thick soups.
- Valve/Fittings for Transfer Pumps: Not all Jøni kettles can be fitted with a valve connection required for external transfer pumps. If you need to pump or transfer products out of the kettle for automated production lines or remote filling, confirm at order whether a suitable valve and connection can be installed.
- Batch Size Range: Each kettle has a minimum and maximum practical batch size. It’s important that these align with your anticipated prep volumes.
- Pour Heights: The height a kettle reaches when fully tilted is critical if you intend to decant directly into specific bins or containers. Always check your bin or vessel height to ensure your selected Jøni model will clear it safely and conveniently. Some high-capacity or mobile models have specifics on pour height clearances that can impact ergonomic workflow.
- Cooling Options: Some models offer rapid cooling through open water chilling or jacketed cooling, ideal for food safety regimes.
- Accessories: Hand showers, GN-supports, and special hatches vary by range - many must be factory-fitted at order, not retrofitted.
- Control Type: Ranges from basic robust dials to digital interfaces, and up to full touchscreen automation with recipe programming and batch logging.
- Energy Source: Most Jøni models operate on electricity with an internal steam generator (electric steam jacket). Select variants are designed to connect to building steam for institutions with a central steam supply. It’s vital to establish your site’s power or steam capacities at the project planning stage.
Some features must be chosen at the time of order and cannot be retrofitted; consult Hostservice early in your project for best outcomes.

Controls: System Summary
Jøni controls range from straightforward to highly sophisticated. Choose for your workflow and reporting needs:
AutoTemp 02e/32/82
Robust, dial-based/electronic temperature control (non-mixing).
AutoTemp 32
For non-stirring kettles only. Push button controls; water is dosed based on volume as the unit has a flow meter.
AutoTemp 56
The AutoTemp 56 display features temperature control that prevents overcooking, burning and saves energy. The display normally shows the actual temperature of the food, but a keypress gives access to display and alter the temperature setpoint. This is set quickly and precisely to between 1 and 120°C. The heating supply is controlled automatically to ensure that the required food temperature is reached.
Controlling the heating supply according to the food temperature ensures that the required food temperature is achieved and maintained, and means that the user only needs to give the kettle minimal attention.
To prevent burning and enable gentle heating, the heating power can be adjusted in dynamic steps from 1 to 9. These steps control the temperature of the inner kettle in relation to the food temperature. If a low value is set, the heating process will be gentle but slow. If a high value is set, it will not be as gentle, but it will be faster.
This makes the heating of milk, for example, easy and safe.
AutoChef 86
The AutoChef 86 features a sturdy and easy-to-use interface. The touch-screen is a real industrial solution that can withstand the production environment, can be operated with gloves and is not sensitive to drops on the screen, for example.
The large size, high contrast and wide viewing angle of 170 ° make it easy to see and operate the control regardless of the person's height.
The screen responds to pressure and is therefore not sensitive to dirt or dirty fingers.
AutoChef 82
Equivalent controls to the 86 stirrer, but for non-mixing kettles. Full-colour touchscreen; programmable recipes, HACCP integration, cloud analytics, user menus, water dosing.
Features like adjustable tilt speed, energy tips, and online monitoring are unique to advanced models.

Customer Reviews or Testimonials
We’ve loved working with Rangiora Bakery and were excited to assist with their latest upgrade. While adding a second Joni kettle, they mentioned challenges emulsifying powdered mixtures. We recommended pairing the kettle with the Dynamic Gigamix homogenizer, a perfect solution for consistent results!
Frequently Asked Questions: Jøni Kettles at Hostservice
What are the available capacities of Jøni kettles at Hostservice?
Hostservice stocks the Jøni Easystand in four key capacities: 40L, 60L, 80L, and 100L - covering most needs for commercial batch cooking in New Zealand.
Are these units electric or steam powered?
The current Hostservice range features electric models. These units have a steam boiler which fills the jacket with steam. However, options for steam fed kettles are also available.
Is installation complicated?
We have technical diagrams, measurements, power loadings and other information on file that we can provide you with if you would like to arrange installation, or, if you want a simple and risk-free option, we can take care of installation. As part of our sales service, we will generally pay a site visit to consider the installation requirements and ensure we specify a machine that isn’t going to cause undue cost or inconvenience during the installation process.
What cleaning features help maintain food safety?
The seamless stainless bowl, hand shower accessory, and large, fully openable lid (rotating lid optional) make cleaning fast and compliant, helping maintain top-tier hygiene standards.
Can I see real customer feedback or NZ case studies?
Potentially. As you will appreciate, many of our clients prefer that we do not use their investment as an example to others, as this can compromise intellectual property. However, our team may be able to provide you with some examples that apply to you.
